Southampton Fish Pie

Delicious, quick and easy – a fish pie anyone can make. Combine with a salad for a great meal – for yourself or to share with friends.

Quick & Easy Fish Pie

Things you need

  • · 750g potatoes (peeled or washed, unpeeled), cut into large chunks
  • · knob of butter (approximately 1 tbsp)
  • · 3 tbsp milk
  • · 2 salmon fillets (approxixmately 350g), cubed
  • · 250g cod fillet, cubed (for fish options see 'helpful notes' below)
  • · 100g frozen or fresh peas
  • · 200g creme fraiche

Here's how

1. Preheat the oven to 200*C (gas mark 6)

2. Boil the potatoes for 10-12 minutes until tender then drain. Mash with butter and milk and season

3. Cook the salmon and cod in a pan of boiling water for 5 minutes then drain and return to the pan. Add the peas, chives, creme fraiche and seasoning and cook ently for 2-3 minutes.

4. Transfer the fish mixture to an overproof dish and top with the mashed potato. Bake for 10 minutes until golden.

Helpful notes

· This fish pie can also be made with a packet of mixed fish instead of salmon and cod fillets - just use the same quantities.

· This recipe serves four, so is good for sharing or for 2-3 meals. If you want to only cook enough for 2 people/meals, then half the recipe amounts and use a smaller overproof dish.
